Abstract :
Tannase production under solid-state fermentation was investigated using isolated Aspergillus niger fungal strain. Enzyme production was carried out under Solid State Fermentation using different tannin rich substrates. In the present study we used pineapple [Ananas comosus], belonging to the family [Bromeliaceae] as a solid substrate. The optimum parameters were studied for the maximum enzyme production like optimum pH [4], temperature [32Ëšc], incubation period [72hrs] and concentration [800mg/lit].
